A fantastic guide to a fantastic cooking video series

Watching Greg Easter's cooking videos on YouTube is a bit like peeking into the kitchen of a fine restaurant and learning how the chef made your food taste so good. I've been a fan of Chef Easter's YouTube channel CookingInRussia for several years now, and I am always learning something new about food and professional techniques that no one else demonstrates. These are not dumbed-down recipes made easy for the home cook. These are for the home cook who wants to ramp up their knowledge, skill, and enjoyment of making food with incredible flavors. Chef Easter is also quick to reply to questions asked on the channel and readily shares his knowledge and skills. It is obvious that much preparation goes into the videos, which are easy to follow and understand. His recipes are impressive

The YouTube channel companion books are a great idea, and an excellent addition to the YouTube videos. It's a unique idea and shows a level of commitment that goes beyond the video.

Chef Easter has made many improvements to Volume 2 of the channel companion series. In this volume, the complete recipe is included with the ingredient list and the procedure. Recipes can be prepared without having to follow along with the video while cooking.

Just seeing how a great recipe is prepared would be enough, but Greg Easter takes the extra step of teaching exactly why certain techniques and ingredient combinations work to take flavor to the next level. Volume 2 starts out with a section that covers how flavors are produced, such as the chemistry behind flavor development (including Bacon Chemistry) and details about flavor ingredients, flavor pairings, and detailed information about herbs and spices. He also expands on subjects touched upon in the video series, such as steak tenderness.

Chef Easter is the real deal and a rarity in the food video world. He gives real recipes based on real science and professional techniques that the home chef can not get anywhere else. Since Food Network shifted from education to entertainment (a point the Chef readily makes), there are few places to get sound cooking advice at a professional level. Many "blog chefs" on YouTube are quick to steer the viewer wrong with crazy ingredients and techniques.

Many CookingInRussia recipes are now my family favorites, and I have made some of them many times. I might not make every recipe Chef Easter has, but I do learn something every time I watch the video. I can't thank him enough for the food education I have gotten from his videos.

All his cook books deserve space on your kitchen counters. His cookbooks are the only cook books that stay in my kitchen all the time. And I have an entire bookcase for the rest in our study. He has the best recipe for whatever you are looking for... I promise

About the Author

Kabir, the North Indian devotional or bhakti poet, was born in Benares (now Varanasi) and lived in the fifteenth century. Next to nothing is known of his life, though many legends surround him. He is said to have been a weaver, and in his resolutely undogmatic and often riddling work he debunks both Hinduism and Islam. The songs of this extraordinary poet, philosopher, and satirist, who believed in a personal god, have been sung and recited by millions throughout North India for half a millennium.

Arvind Krishna Mehrotra is the author of four books of poetry, the editor of The Oxford India Anthology of Twelve Modern Indian Poets and Collected Poems in English by Arun Kolatkar, and the translator of The Absent Traveller: Prakrit Love Poetry. A volume of his essays, Partial Recall: Essays on Literature and Literary History will be published in 2011. He is a professor of English at the University of Allahabad and lives in Allahabad and Dehra Dun.

Wendy Doniger [O’Flaherty] graduated from Radcliffe College and received her Ph.D. from Harvard University and her D.Phil. from Oxford University. She is the Mircea Eliade Distinguished Service Professor of the History of Religions at the University of Chicago and the author of many books, most recently The Bedtrick: Tales of Sex and Masquerade, The Woman Who Pretended to Be Who She Was, and The Hindus: An Alternative History..

Kabir's vision was of the unity of the human and divine

Kabir was born about 1440 (probably), and was a contemporary of the founder of the Sikh religion, Guru Nanak (possibly his mentor). A weaver by trade, and a mystic by nature, his spiritual vision accepted no division between Life and Creator, man and God, as evinced by the following excerpts; "I Laugh when I hear that the fish in the water is thirsty: You do not see that the Real is in your home, and you wander...listlessly! Here is the truth! Go where you will...if you do not find your soul, the world is unreal to you." and ..."Kabir says, God is the breath of all breath". Many of these songs contain criticism, not of "worldly" people who lived materialistically, but of renunciates who sought God outside of life and relationships; "The infinite dwelling of the Infinite Being is everywhere: in earth, water, sky, and air...He who is within is without; I see Him and none else". This translation by Tagore also contains allusions to Kabirs' cosmology and essential spiritual practice (absorbtion into the Divine Word or creative power) missing in the naturalistic and minimalistic interpretatations of Robert Bly. The poems, or songs, themselves are remarkably fresh, as if they contained the living inspiration which gave them form, and remain, as it were, untouched by time.

My favorite book ever

I first found this book when I was young, 16, and exploring religion in my heart. These poems spoke to me. The relationship with god that is described in the poems is the one I wanted for myself. I have since read other versions of Kabir and many poems by Tagore, but this book remains my one and truest "Bible," which I always have closeby, and read in times of trouble or gladness. Whenever I read these poems I feel at peace and at one with my heart. I can't recommend these beautiful poems highly enough.

Archaic language, often stilted prose

Tagore wrote these translations a century ago. The language is often stilted or archaic.

However, I sense that these translations may be truer to the original than Robert Bly's. Indeed, reading these helped me to understand that some language that I thought was Kabir's was actually Bly's. For instance, I was always impressed with the line in Bly's translation that refers to a place "where those who live are not afraid to die."

But in Tagore's translation, that same reference was something to the effect of a place where there is no fear of death. The contrast between the living and the dead was not Kabir's but Bly's.

If I could only read one translation I would read Bly's. But why read only one?

Surprising amount of colour in this

This is a really nice book about the vehicles of the Imperial Guard, but also artillery and aircraft. There is a lot of black and white of miniatures, but also 16 pages of full colour! Well worth a read for a WH 40K fan.

Welll written, suspense and meaningful

The Netherlands was a worse place for Jews than even Germany since proportionally more Jews were killed. And yet most of the Dutch did not recognize that a large proportion of the population was missing.. Hanneke, the blonde Aryan teen grew up in this atmosphere, with little Jewish contact. She disliked the regulations of the Nazis, so used her job at the undertakers to distribute black market goods, which she considered rebellious. One day Hanneke is asked to look for a missing Jewish girl that a customer had been hiding, and she ventures into the far riskier world of the Resistance.

I found the book exceedingly suspenseful, well-written and compelling. I read it all in one sitting late into the night. Hesse captures the historic atmosphere of wartime Amsterdam, the conflicts of choices we make in times of crisis and the stresses of coming of age as a moral human. An excellent book for anyone from 12 to 120.

A Suspenseful Success

This story of choices and flukes and wartime resistance is well suited in subject, tone and approach for adolescents. Author Monica Hesse treats both her readers and her characters with respect. She clearly expects readers to make inferences, reflect on situations, and make connections.

Her teen and young adult characters are imperfect yet resolute. Pacing is swift and the plot is nimble, while having several largely believable twists and surprises. Timing is a bit compressed, but this is forgivable because it heightens the intensity of the story.

The protagonist, Hanneke, is finely drawn, and poignant without pathos. Early in the story, she describes herself as follows: “I used to be a careless person, and look where it got me. Now I transport black market goods, but only because it feeds me and my family. I flirt with German soldiers, but only because it saves me. Finding a missing girl does nothing at all.”

Hesse crafted this story prompted by a visit to Amsterdam, followed by research into what life was like there during its occupation during WWII by Germany, and the mass deportations that followed. She has crafted a story that is taut and suspenseful in a way that is respectful to those whose lives were changed or shattered by the events of WWII.

I appreciated Hesse’s afterword about her research and the historical components of this story, some of which may come as a surprise, even if you are relatively familiar with wartime events in the Netherlands. She also names several excellent memoirs in her acknowledgements. Teens who are looking for additional reading after finishing this book would do well to read (or re-read) The Diary of a Young Girl by Anne Frank and follow it with Anne Frank Remembered, the memoir by Miep Gies.

a girl in a dangerous mystery in Nazi-occupied Amsterdam

This is a compelling mystery, a girl in Nazi-occupied Amsterdam, a black market runner who goes on a search for a Jewish girl who has disappeared from her hiding place behind a pantry. It's a dangerous quest that gets Hanneke involved with the resistance, and then with the roundup of Amsterdam's Jews.

This is aimed at the 12-and-up market, and Hanneke is someone a young reader might identify with, not a heroine but a troubled and conflicted girl, alienated from her parents and this drab, blighted world she inhabits. The prose is straightforward and a quick read. The plot is intricate and detailed, something the reader will have to follow closely, and the plot takes some nasty twists, and there are endings that are not endings. "When things come to and end in a way you don't expect, in a way you never could have imagined, do they really come to an end? Does it mean you should keep searching, for better answers, for ones that don't keep you up at night?"

The themes are dark, and Hanneke and her friends are in very great danger, but that's to be expected. The author has done an impeccable job of conveying the streets, social dynamics and dangers of wartime Amsterdam, and any young reader who knows about Anne Frank will understand this.

Strongly recommend.
